For the woodruff strawberry cold bowl, clean and rinse fresh strawberries and quarter 400 grams of them. Divide evenly in decorative bowls.

Wash woodruff, pluck off the leaves and let dry.

Heat apple juice (do not boil), add woodruff, mix and let cool.

In the meantime, finely puree the remaining strawberries with sugar in a blender.

Mix the strawberry puree with the apple juice and the woodruff and finally add sparkling wine.

Mix lightly and pour over the strawberry pieces. Decorate the woodruff strawberry cold dish with a few woodruff leaves and serve.
