For the woodcutter ravioli, boil potatoes and let cool (preferably from the day before). Put the durum wheat semolina in a bowl with the egg, salt and olive oil.

Knead through, gradually adding water and kneading until dough is pliable. Wrap in plastic wrap and let rest for 30 minutes.

Finely chop onion and green onion and fry in a pan. Let cool, peel potatoes and place in a bowl. Mash coarsely with a fork. Crumble gray cheese. Add curd cheese, onions, herbs and spices and mix well. Season to taste.

Roll out the pasta dough 3 mm thin, cut out or cut squares as desired. Place filling on top, fold and press the edge together with a fork.

Cook the woodcutter ravioli in boiling salted water for about 3-5 minutes.
