For the winter compote, pour the tea over the dried plums in a large bowl. In another bowl, pour the hot water over the apricots and let both soak for at least eight hours (preferably overnight). Place the plums with the liquid in a large saucepan, add the sugar and simmer over medium heat for 10 minutes. Also simmer the apricots in the water for 10 to 15 minutes until soft. Combine the plums and apricots in a large bowl and mix with the port. Cover and let the winter compote cool in the refrigerator for about 1 hour.
