Instructions:

For winter chicken with raw ham and nuts, first finely chop the onions, raw ham or bacon and pepperoni, cut the dried fruit into strips. Salt and pepper the chicken pieces and fry them in hot oil on all sides. Lift out again.

Now add onions to pan (adding fresh oil if necessary) and sweat very slowly over low heat until onions have softened. Add raw ham, toss briefly and then stir in sliced fruit and pepperoni. Sauté vigorously, pour in sweet wine and reduce completely. Pour in wine, let it boil down again and only then add the soup. Season with lemon zest, ginger, pepper, nutmeg and salt.

Put chicken parts back in and cook for about 40 minutes, stirring occasionally. (Add chicken breasts just before end of cooking so they don’t get too dry). Meanwhile, add a little soup or water if needed, but never add too much liquid so that the chicken does not boil and a creamy sauce can form. Season the winter chicken again and add more soup as needed. Stir in grated hazelnuts and let it simmer briefly. It is best served in a pot.

Serve the winter chicken with raw ham and nuts with couscous or rice.
