For the winter apple jam, peel, core and dice the apples. Cut open the vanilla pod.

Mix 50 ml of the apple juice with agar agar and let stand so that the mixture can swell.

Meanwhile, pour the remaining apple juice into a large enough pot. Add lemon juice, sugar and the spices. Add diced apple and bring to a boil. Simmer until apples are soft. Blend through if desired.

Stir the mixture of agar-agar and apple juice into the apple mixture and simmer again for a few minutes. Use the jelly test to check if the jam is ready.

Finally, stir in the rum and immediately pour the winter apple jam into prepared (sterilized) jars. Flambé the jam before sealing. To do this, drip a few drops of high-proof alcohol on it with an eyedropper. Ignite the jam in the jar and seal immediately.
