Preparation of the wild rice Rinse and soak the wild long grain rice. Sauté the onions in butter, add the long grain rice, mix, pour in the soup, season with salt and bring to the boil with the lid closed. Cook at moderate temperature for 40 minutes until soft, add a little butter.

Preparation of the wild rice rösti Coarsely grate the not too soft cooked, peeled potatoes on a grater. Mix with the long grain rice and season. Heat the fat in a coated frying pan, pour in the potato-long grain rice mixture. Roast at low temperature, turning several times, until the mixture is well toasted all over. Add a little more fat as needed. From the edge, push the potato-long grain rice mixture together to form a flat cake or, if necessary, press it into a round shape and continue roasting at a higher temperature until a cohesive crust has formed.
