For the wild garlic spinach, first prepare the wild garlic. Rinse the wild garlic under cold running water, shake dry and cut into 1 cm wide strips.

Peel the onions and cut into fine cubes. Melt ½ tbsp butter in a frying pan. Sauté the onions in the butter until light and translucent. Add the wild garlic and sauté for 2 minutes until it collapses.

In the meantime, reduce the red wine and port in a frying pan to 5 tablespoons. Remove the frying pan with the wine from the heat and then mix in the remaining cold butter with the sauce thickener.

Add the wild garlic, heat gently repeatedly and bring the wild garlic spinach to the table right away.
