Wild Garlic Rösti

(*) Wild garlic, the noble cousin of garlic Mix the grated potatoes with wild garlic and season heartily with salt. Heat half of the butter in a frying pan and fry the grated and seasoned potatoes until crispy.

Using a kitchen hand (frying paddle), press the rösti together to form a compact patty. Cover with a plate. Roast on low fire for about 10 minutes.

Using the plate, turn the rösti patty to the other side so that the crispy side is on top of the plate. Melt the remaining butter in the frying pan. Next, slide the hash browns, not yet fried side down, into the skillet.

Add a little water around the rösti, along the edge of the pan, to make the rösti moister and crispier. Place the plate on the frying pan again. When both sides are fried golden brown, place the rösti on a platter to serve.
