Rinse the salmon trout well inside and out, rub dry and season heartily with salt and pepper. Coarsely chop the kitchen herbs and generously fill the trout with them. Cut the lemon peel into very fine strips and place them together with the butter flakes in the trout form.

Coat a large piece of aluminum foil with olive oil, place the stuffed trout on it and wrap it well. Cook on the broiler for about 30 minutes, turning it again and again to the other side. (The trout can also be cooked in the oven at 180 °C in about 30 min).

Unwrap trout, fillet and bring to table with baguette.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these also stand out for their fresh taste!
