Clean the cabbage, cut into two quarters, remove the stalk and finely slice the cabbage. In sufficiently boiling salted water form and make two min (blanch). Transfer to a colander, cool, drain and cool. For the sauce, mix sugar, egg yolks, mustard, salt, pepper and milk with a whisk and beat in lightly simmering water until creamy. Cool. Season with vinegar, Tabasco and perhaps salt and sugar repeatedly. Fold the sauce into the cabbage and infuse for a few hours.
