Whisk the flours well together in a wide bowl and pour about 50 grams into a separate, smaller baking bowl. To the smaller mass of flour add the sugar and the crumbled yeast form and stir with about 75 grams of water to a thin dampfl. Leave to rise in a warm place for about 30 minutes until the dough bubbles. Then add the dampfl to the main amount of flour form, with the rest of the water in which the salt was dissolved, dissolve the remains of the dampfl from the small baking bowl, add to the flour form and knead everything together for about 10 minutes with the dough hook of the hand mixer to a smooth dough. On a floured work surface, knead the dough a little more with floured hands, form into a ball and let rise for 30 minutes (warm place). Then knead the dough again by hand and fill into a greased bread pan. Alternatively, shape into a loaf and place on a greased baking sheet. Brush with water and let rise, covered, for 60 minutes. Then place in oven heated to maximum heat, reduce heat on the spot to 230 degrees, bake for 10 min, then reduce heat to 200 degrees and finish bread in 45 min. If you brush the bread with cold water in the middle and towards the end of the baking time, it will crisp up nicely and get a shiny surface. On a rack (without baking dish, in case that used).
