Instructions:

A great cake recipe for any occasion:

Shortcrust pastry: mix the butter and sugar together, add the egg and finally knead in the flour. Chill the dough for 1 to 2 hours, shape into a cake springform pan (diameter 28 cm) and bake for 12 minutes at 180 to 200 °C in a convection oven. Bake for about 5 to 10 minutes longer in bottom and top heat.

Curd mixture: heat the butter until it is liquid, mix with the curd, egg yolk and the juice of one lemon, mix 100 g sugar with the corn starch and stir into the curd mixture. Beat the egg whites with sugar until stiff and fold into the curd mixture.

Crumbles: Mix the butter and sugar together, then add the flour with the baking powder and knead until you get a crumbly mixture.

Composition of the cake: cool the short pastry base in the cake springform pan, add a third of the curd mixture on top, crumble the pumpernickel and sprinkle on top. Top with the drained cherries and spread the remaining curd mixture on top. Finally, spread the crumble evenly over the cake and bake at 215 °C for about 15 to 20 minutes.

Later, remove the cake from the oven, carefully loosen the edge from the ring with a kitchen knife and bake the cake at 190 degrees for another 45 min.
