For the warm potato salad, cook the potatoes in a large pot of salted water until al dente. Hard boil the egg in a separate pot.

In the meantime, dice the tomato and the cucumber. Peel and coarsely chop the onion. Peel the boiled egg and chop it as well.

Let the potatoes cool down a bit and peel them. They should still be warm. Depending on the size, cut into quarters or bite-sized pieces.

Mix potatoes with vegetables and herbs and season with salt. Garnish with the egg cubes. Finally, pour olive oil and vinegar over the warm potato salad.
