For the warm barbecue sauce, finely chop shallot onion, garlic cloves, thyme and parsley, cut mushrooms into small slices. Dip tomatoes briefly in boiling water, peel off skin and cut into small cubes, cut pancetta into very small cubes.

Heat small ovenproof bowls in the oven at 140 degrees convection.

Heat oil in a pan, fry shallot onions until light, add pancetta cubes and fry briefly, add garlic, spices and tomato paste and fry again briefly. Then add mushrooms and fry again briefly, finally add tomato pieces and pour in beef broth. Simmer gently for five minutes.

Pour the warm barbecue sauce into hot bowls and serve immediately.
