Sauté potatoes in salted water, peel, press through a press and cool. Mix butter with mustard. Finely chop the onion, egg white and cucumber, pass the egg yolk through a sieve and add. Chop the chives or parsley and add to the mixture, setting aside a small amount for the garnish. Stir everything into the potatoes and season with salt, cumin and paprika. Finally, fold in the whipped cream. Before serving, sprinkle with the remaining chives.

This spread goes exceptionally neat with hearty dark breads.

Our tip: Always use fresh chives whenever possible!
