For the waffles, separate the eggs and beat the egg whites with a pinch of salt until stiff. Score the vanilla pod lengthwise and scrape out the pulp.

Mix the yolks, sugar, vanilla pulp, flour and canola seed oil well, if the mixture is too firm, stir in a little milk. Gently fold the beaten egg whites into the mixture.

Heat a waffle iron, brush with a little oil and pour in 3 – 4 tablespoons of batter per waffle. Bake on medium heat until golden brown. Serve the waffles with fresh fruit, stewed apples or apple-cinnamon chutney. For the apple cinnamon chutney, peel, core and thinly slice the apples. Peel and finely chop the onions and garlic and put all three ingredients in a large pot. Add vinegar, sugar, mustard flour, ginger and cayenne pepper and simmer everything in an open pot on lowest heat for 1 hour.

Stir from time to time. Then add the raisins and simmer for another 15 minutes. This chutney should be cooked until it no longer flows from the spoon!
