Instructions:

For the Viennese herring salad, cut the cooked potatoes, fruit, cornichons and cooked root vegetables (carrots and yellow beets) into small cubes. Cut the herrings into larger pieces and if there are still bones, remove them.

Season the mayonnaise with the sour cream and spices. Add the finely diced red onion and mix. Leave to cool for a few hours.

When serving, make sure the plates are cool. Peel and halve the cooked quail eggs and place them on the salad as garnish.

Decorate the Viennese herring salad with marinated Vogerlsalat.
