For the vegetable strudel, boil the potato, peel and cut into slices. Peel and dice the carrots, yellow carrots and parsnips and cook until soft. Cut up the broccoli and also boil until soft and strain.

Mix the vegetables, egg, parsley, salt and pepper together. Lay out strudel dough, spread vegetable mixture on one side. Fold in sides 1 cm, roll up and brush with egg or water. Bake the vegetable strudel in the oven at 190°C for half an hour.
