For the vegetable strudel, clean the carrots and cut them into small cubes, cut the broccoli and cauliflower into small pieces. Boil the carrots, broccoli and cauliflower in salted water for 5 minutes, then rinse and drain well.

Mix onion, carrots, broccoli, cauliflower, crème fraiche, eggs, salt and pepper together well. Spread strudel dough on a slightly damp cloth, brush with butter, sprinkle with bread crumbs and coat with filling, fold in on sides and roll up using cloth.

Brush with remaining butter. Place on a baking tray lined with baking paper and put in the preheated oven, bake at medium heat until the vegetable strudel has a nice golden color.
