Clean and coarsely chop the vegetables. In a saucepan with butter, briefly steam the vegetables except for the tomatoes until soft and extinguish with water. Add the tomatoes and simmer on a low heat for about half an hour, then add the mushrooms and let them bubble up again. Then strain and season the clear soup with salt and pepper. The remaining vegetables in the sieve can be used according to taste, e.g. pureed as vegetable mash or pureed and poured with a little bit of clear soup as puree soup.

It is worth making larger quantities of the clear soup, as it is easy to freeze.

Tip: Do you know purple carrots? This is an old, very aromatic variety – why not use it for a change!
