For the vegetable rice pan, roughly dice all vegetables and thinly slice garlic and ginger. Heat oil in a large frying pan.

Sauté onion, garlic, ginger and carrots first over high heat, then add remaining vegetables.

Season with salt, pepper, lemongrass, turmeric and soy sauce, sauté everything well together, add rice, mix well and round off with chili powder.
