For the vegetable curry, let the frozen vegetables thaw a bit. Peel the onion and cut into coarse pieces. Peel and finely chop the garlic cloves.

Heat the oil in a high pot and fry the onion with the garlic. Add the curry paste, stir briefly and quickly pour in the soup.

Now stir in the curry powder and pour in the coconut milk. Now add the vegetables and simmer for about 15 minutes on medium heat. Serve the vegetable curry with rice.
