For the vegetable curry, clean and cut vegetables. Wash lentils with cold water.

Heat oil in a high pot and sauté onion and leek. Add lentils.

Pour in soup and add spices as desired. NOTE: salt and possibly sugar only at the end of cooking time!

Stir in coconut milk. Add vegetables. Cook until lentils break down and a creamy sauce is formed. Add water if necessary. Season and salt when the dish is ready.

If you like, you can add some cinnamon into the vegetable curry. I like to use the spices from Sonnentor (e.g. Shantis Tandoori Masala, Flower Magic Salt …).
