For the vegan cherry muffins, mix the dry ingredients in a bowl. Mix oil with soy drink and vinegar in a separate bowl. Add the liquid to the dry ingredients and mix well.

Fold the drained cherries into the batter. Divide batter among paper muffin cups, in a muffin baking pan and bake in a preheated oven at 180°C top and bottom heat for about 20 minutes.

Check whether the muffins are ready by means of a wooden stick test. If some batter sticks to the muffin after poking it, bake for a few more minutes. Let cool and enjoy the vegan cherry muffins! ♥
