A more wonderful asparagus recipe:

Make the veal milks lightly in salted water, for about twenty min.

Prepare the asparagus (ready to cook, e.g. peel, remove woody parts and dirt), season the cooking water with salt and sugar. Cook the prepared asparagus.

Cut the veal milks into small cutlets. Then turn them in the flour on the other side, tap them lightly and pull them through the beaten egg. Then fry the so prepared milk cutlets in pure butter at low temperature.

Once the frying process is finished, arrange the veal milks as you like and add the green asparagus.

The veal milk cutlets with green asparagus are excellent as a light main course, but can also be served as a warm entrée.
