Instructions:

Cut the tomatoes crosswise, blanch briefly with boiling water, rinse briefly after cooling, remove the skin, remove the seeds and cut into small cubes.

Rinse the lettuce and remove the bad leaves. Arrange the lettuce on plates. Remove the skin from the onion and finely dice it. Stir a sauce from the remaining ingredients and season to taste. Add the onions. Pour the sauce over the lettuce.

Cut veal kidneys into small slices. Heat clarified butter in a frying pan and roast the slices of kidney lightly dusted with flour for about five minutes, season with salt and pepper and place on the lettuce. Garnish with the diced tomatoes.
