Instructions:

Preparation Chicken breasts cooled rinse, dab with crepe.

Slightly peel skin from one side and slide thyme sprigs underneath. Pull skin over and attach with wooden sticks. Brush chicken breasts with oil, place on broiler, broil on all sides and cook at moderate temperature until completely cooked through. Cut pineapple into small pieces, remove peel and cut into small slices. Cut apricots and plums in half, remove stone. Mix oil with pepper and brush the fruits with it all around, grill on the broiler. Scrape the pulp from the vanilla pod and mix with peanut oil. Brush one side of baguette slices with vanilla oil, place on broiler and broil until golden.

Stir maple syrup through with lime juice and spread evenly over fruit when ready to serve. Garnish with lemon balm and mint strips.
