Turkey Steak with Leek Onion Vegetables

Clean the spring onion, rinse and cut into larger pieces. Cut some greenery into fine rings for garnish.

Drain apricots, reserving juice. Cut flesh into narrow wedges.

Heat mustard sauce and apricot juice (1).

Heat apricot slices in it.

Cut fillet into 4 equal slices. Heat oil in a frying pan and roast the meat in it for about 3 min on each side. Season with salt and pepper, remove and keep warm.

Heat fat in a frying pan. Sauté the spring onions in it for about 3 min. while turning. Season with salt and freshly ground pepper.

Serve vegetables and steaks with a little sauce. Sprinkle with spring onion rings. Serve remaining sauce separately.
