For the turkey roulade, thinly slice the turkey cutlets. It makes sense to buy one piece of turkey breast and cut the cutlets in two contiguous pieces. And quite thinly, so they don’t have to be pounded too hard.

Then lightly season the cutlets (with salt, pepper and cayenne pepper).

Then brush with turkey farce, top with arugula and roll up.
