Turkey Breast Fillet Gratinated with Feta Cheese

With a fork, mash the feta cheese together with yogurt into a cream. Drain the olives, set aside 10 for decoration, coarsely chop the rest.

Rinse parsley, shake dry, pluck leaves from stems. Keep a quarter for the garnish, chop the remaining parsley leaves. Stir everything with thyme and egg yolk into the feta cheese. Season with pepper.

Rinse turkey breast under cold water and dry. If necessary, remove fat, vision and silverskin. Cut meat into evenly thick slices (about 2 cm). Heat 2 tbsp. oil in a large frying pan. Sear half of the turkey slices in it for no more than 1 min. on each side. Remove and season with salt.

Add remaining oil to frying pan and fry 2nd half of meat in the same way. Preheat the oven to 250 °C / gas 5-6. Halve remaining olives.

Cut ends of baguette into small pieces, cut bread diagonally into the same number of turkey slices, place on a baking tray. Place filet slices, well drained, on baguette slices. Place 1 heaping tsp of feta cheese cream on each of the meat slices. Garnish with halved olives. Place the baking tray in the middle rack of the oven.
