For the tuna cheese sauce, finely chop the shallots and garlic. Add the oil from the tuna to a saucepan and sauté the shallots until translucent. Sauté the garlic briefly.

Chop the tuna a little and sauté. Pour in whipping cream. Add crème fraîche, cheese spread and mustard and let simmer.

Season to taste with salt and pepper. Just before serving, add the finely chopped basil. Do not cook the tuna-cheese sauce any more.
