Instructions:

Defrost puff pastry slices according to package directions. Rinse and peel carrot, clean and wash leek and cut both into strips.

Heat butter and steam the vegetables in it for approx. 5 min. until soft. Season with salt, pepper and juice of one lemon. Mix vegetables with horseradish and spread evenly on 4 puff pastry slices. Place trout fillets on top of vegetables. Separate egg. Brush edges of pastry with egg white, cover trout fillets with remaining puff pastry slices and press edges firmly until smooth.

Brush puff pastry packets with egg yolk. Bake in a heated oven at 200 degrees for about 20 minutes.
