For the triple tartar of fish chop the fish best with a sharp knife not too fine (not in the cutter or mince, otherwise it turns gray easily). Put chopped masses in 3 bowls and season with salt, pepper, lime juice and lime zest. Add a little soy sauce to the tuna only.

Add finely chopped onions or shallots to each fish. Cut the bell bell pepper into small cubes and add to the salmon and swordfish. Allow to marinate in the refrigerator for about 1/2 hour.

Cut the wholemeal bread into thin slices and toast, do the same with the pumpernickel and spread the tartar not too thinly on the toasted bread.

Cut the bread into squares or triangles and garnish with very fine onion rings or chives. Arrange the three fish tartars on a glass plate with a paper sleeve. Buen Provecho !!!!
