For the tomato salad with fennel and zucchini, wash the tomatoes with cold water. Cut half of them into cubes. Wash the zucchini, cut away the stalk and flower base. Cut into small cubes. Wash the fennel, remove the hard parts and cut the bulb into cubes. Chop the tender fennel greens.

Heat olive oil in a pan and fry the fennel and zucchini cubes. Add salt. Add the whole tomatoes and fry.

Mix a marinade of balsamic vinegar, olive oil, mustard, herb salt and pepper.

Place diced tomatoes, roasted lukewarm vegetables and fennel greens in a bowl. Pour the marinade and stir well.
