For the tofu skewers with tomato marinade, first stir coconut milk until creamy and pour into a shallow baking dish. Cut tofu lengthwise and crosswise to make a total of eight elongated pieces. Soak tofu in the coconut milk for 3 hours.

Mix lime juice, soy sauce, tomato paste and maple syrup. Stir in a few drops of sesame oil.

Remove tofu from coconut milk, pat dry and place on skewers. The remaining coconut milk can of course still be used for sauces, soups, etc. Brush skewers thinly with oil and grill for about 2 minutes per side on the grill rack. To serve, thinly brush the tofu skewers with tomato marinade.
