For the Toasty Roll Ups, first blend all the ingredients for the pesto in a tall cup with a blender until fine and season with sea salt and pepper.

For the toasties, roll out the toast slices thinly with a rolling pin. Spread pesto thinly on the surfaces, leaving about 1 inch from the top edge. Spread grated cheddar on top and sprinkle pine nuts on top. Tightly roll up the toast slices.

Whisk together milk and eggs. Melt butter in a non-stick skillet. Pull Toasty Roll Ups through milk and egg mixture and then fry in butter until golden brown all over.
