For the leek strudel with bacon, preheat the oven to 180°C degrees (upper-lower heat). Cut the leek into rings, chop the onion. Fry the bacon in a pan (possibly with a little fat) and add the leek and the onion. Sauté the whole thing a little bit. Stir in the caraway seeds and season with a little salt (not too much, because the bacon and the Emmentaler are already very spicy) and pepper.

Add the Emmentaler to the still warm mixture so that it melts a bit. Roll out the puff pastry on a baking sheet and spread with the crème fraiche. Spread the filling in the center and then fold the pastry over it from both sides to form a strudel. Fold the ends of the strudel once. Bake the leek strudel with bacon in the oven at 180°C degrees for about 10 minutes until the puff pastry is golden brown.
