For the Tarte Tartin with apricots, first preheat the oven to 200 degrees. In an ovenproof pan (preferably with a removable handle) melt the butter and caramelize the sugar in it.

To prevent the sugar from burning, gradually add the water. When a nice caramel mixture has formed, place the apricots, cut side down, in the pan so that the entire bottom is covered.

Unroll the puff pastry and place it over the pan. Cut the puff pastry so that some edge overhangs. Then gently press this edge into the pan.

Then place the pan in the oven and bake the tart for about 25 minutes until the puff pastry is golden brown. Remove the Tarte Tartin from the oven and turn out onto a plate. Decorate with a few chopped pistachios.
