Tarhana Soup – Turkey

Peel onion and chop finely. Rinse the peppers, cut in half, remove seeds and dividers and cut into fine strips. Score the tomatoes crosswise at the blossom, pour boiling hot water over them, leave them in the water for a short time, skin them and cut them off. Cut the bread into small cubes.

Melt half of the clarified butter in a wide saucepan, fry the meat in it, add the onion, peppers and tomatoes one by one and sauté.

Pour in the clear soup and let everything bubble together.

Remove the saucepan from the heat and sift in the tarhana flour, stirring throughout.

Gently simmer the soup at low temperature for about 10 min. Season with salt, pepper and paprika powder.

Heat the remaining clarified butter in a frying pan and toast the bread cubes in it until golden brown.

Serve the bread cubes separately with the soup.

Info: Tarhana – a flour made from wheat, dried yogurt and spices is a Turkish specialty. Tarhana is available in Turkish stores.
