Instructions:

For the sweet rice cream with Malibu Beach and apple chips, stir 2 tablespoons of the milk with yolks and cornflour until smooth.

Bring the remaining milk to the boil – stir in the yolk mixture and allow to set briefly – cool over. Stir in the powdered sugar, squeeze out the gelatine and dissolve with the apple juice – stir into the mixture. Add Malibu Beach and stir until smooth.

Finally, carefully fold in the rice and cream. Pour into bowls and let set in the refrigerator for about 2 hours.

Garnish with apple chips and rice cakes.
