Instructions:

For the sweet potato waffles with spinach, peel and finely grate sweet potatoes and onions. Mix the vegetable shreds thoroughly with the other ingredients, season to taste and leave to soak for 15 minutes.

Meanwhile, toast the flour in the sesame oil, pour in the soy milk and bring to a boil while stirring. Add the defrosted spinach, season with garlic, nutmeg and salt and simmer covered for 5 minutes.

Preheat waffle iron and grease if necessary. Bake sweet potato mixture in batches, 3-4 minutes each.

Serve sweet potato waffles with spinach.
