Instructions:

For the sweet potato soup, peel and finely grate the ginger.

Peel the potatoes and cut into small cubes.

Peel and finely chop the onion and garlic.

Peel the tomatoes and cut the flesh into small cubes. Remove the seeds.

Heat olive oil in a pot and sauté onion and garlic. After about 2 minutes, add the sweet potato cubes and ginger and sauté.

Add two-thirds of the diced tomatoes and pour in the soup. Add salt and pepper.

Cover and simmer for about a quarter of an hour.

Wash the parsley, shake dry and finely chop the leaves.

Stir crème fraîche and lemon juice into the soup and puree with a hand blender.

Serve the sweet potato soup sprinkled with the remaining diced tomatoes and parsley.
