Sweet Potato Casserole with Cherry Sauce

Instructions:

Make mashed potatoes according to instructions, but only with half the amount of water, cool a little. Separate the eggs.

Whip egg whites with salt until stiff, gradually add sugar (1).

Beat yolks with remaining sugar (2) until creamy. Add almond kernels, juice of one lemon and zest, cinnamon and rum (omit for children).

Stir egg mixture into mashed potatoes, gently fold in snow and chocolate.

Pour into a greased gratin dish and bake in the oven (preheated to 220 °C) for about 40 minutes.

If the surface gets too dark during baking, cover with aluminum foil.

Cherry sauce:

Boil the juice of the cherries in a saucepan and thicken with mixed cornstarch, add a little sugar if necessary. Add the cherries, get hot and bring to the table to the casserole.
