Try this delicious cake recipe:

Warm honey in a saucepan over mild heat. Add cinnamon powder, whole cane sugar, almond kernels, lemon zest, clove powder, cardamom, kirsch, candied lemon peel and candied orange peel over mild heat and cool.

Put spelt white flour, potash and sweet chestnut flour in a suitable bowl, knead with the honey to form a dough.

Roll out the dough to a thickness of 5 mm, shape it on a greased baking tray and let it rest in a cool place for one night.

Baking time: Bake in a heated oven at 220 °C on the middle shelf for 7-ten minutes. In a hot air oven at 190 °C . Remove and cool on a cooling rack. Cut into squares about 2 cm with a sharp kitchen knife.

Tip: Instead of potash, a packet of baking powder can be used. Pear syrup can be used instead of honey. If you like it less sweet, you can reduce the amount of whole cane sugar and honey.
