Quarter pumpkin, remove seeds and cut into cubes with the peel. Boil water and vinegar with the remaining ingredients and season to taste. (The marinade should be well seasoned and harmoniously sweet and sour.) Cook pumpkin cubes in it not too soft. Pour into jars, pour spice broth and fill up to the brim with oil. Close jars and turn upside down in a deep tub, lined with tea towel. Allow to cool and store in a cool, dark place.
