For the sweet and sour chicken with cashew nuts, first prepare the sweet and sour sauce:

To do this, peel the onions and garlic and cut them into small pieces.Deseed the chili pepper and cut it into fine cubes.

In a saucepan, sauté the onion, garlic and chili in the oil, deglaze with vinegar and reduce slightly. Pour in the strained tomatoes and honey. Add the pineapple pieces (without juice) and simmer gently for another 10 minutes.
