For the sunflower seed bread, toast the sesame seeds until light brown, let cool, mix with the flours, seeds and salt.

Add crème fraîche to the flour and stir in. Dissolve the yeast and honey in the water, add to the remaining ingredients and work the whole thing into a smooth dough.

Let the dough rise for about 60 minutes (the dough volume should almost double).

Divide the dough in half and knead each half repeatedly until hearty. Shape the loaves, notch and let rise repeatedly for about 20-30 minutes. Bake the risen loaves at 240 degrees in a preheated oven for 10-15 minutes, then 45-50 minutes at 200 degrees.

Let the sunflower seed bread cool well after baking.
