Instructions:

Pour warm water into a suitable bowl. Add yeast and stir well with a whisk until dissolved. Sift flour into a second bowl and pour on the yeast water all at once. Add salt and oil on top and quickly mix and knead everything together.

Form the dough – it should be quite soft – into a ball. To do this, lightly flour your hands. Place the ball on a plate dusted with a little flour and let it rise for 20 minutes in a warm place with the lid closed, until it has increased in size by 2/3.

Preheat the electric oven to 275 °C. Brush the tray with a thin layer of oil.

Rinse tomatoes and cut into slices, removing the stalks. Peel garlic clove, and cut cloves in half lengthwise.

Mix into tomatoes to marinate.

Rinse basil briefly, pluck leaves, add to tomatoes.

Rinse arugula, shake off water, cut stems into small pieces and cut leaves into strips. Also add to the tomatoes.

Knead dough briefly with floured hands, then on lightly floured work surface or directly on baking sheet, press apart with hands to form a thin patty – perhaps place on baking sheet.

Fish the garlic out of the tomatoes, it is only for marinating. If you like it, you can bake it as well,-9 spread the tomatoes and kitchen herbs evenly on the bottom. Cut the mozzarella into medium-sized cubes and add them on top as well. Season everything with salt, pepper
