For the sugar pea-walnut sauce, chop the young onion and sauté in olive oil. Squeeze in the garlic clove, chop the sugar snap peas, roughly chop the walnuts and roast everything.

Pour in the whipped cream, stir in the Parmesan cheese – season with salt, pepper and finely chopped basil. Let the whipped cream boil down while stirring constantly.

Serve the sugar pea-walnut sauce on pasta with fresh cress.
