Maybe your new favorite bean dish:

Schöpsernes: dish made from the meat of mutton (Schöps) or sheep.

Rinse the beans and soak them for one night.

Rinse and dab the Schöpsernes and cut into cubes. Season with salt and enough pepper.

Peel and finely chop onions and garlic cloves.

Heat the fat and fry the meat cubes in it until brown all over. Add onions and garlic and fry for a few minutes. Pour in the liquid. Cook the meat for about 1 1/2 hours.

In the meantime, soften the soaked beans with water and bay leaf seasoning for about forty-five min. In the last fifteen minutes of the cooking time of the mutton, add the beans with a little bit of cooking water and finish the whole thing together. Season with salt and – like all mutton dishes – serve very hot.
